Under the linden trees of Hautvillers, within sight of the old abbey gates, a cooper’s mallet taps next door while a tractor climbs Rue de la République. Dom Pérignon is more than a label here: Saint-Sindulphe’s church bears vintners’ plaques from the 1700s, and steep rows look down to the Marne some 120 meters below. Ten minutes away the Côte des Blancs unfolds its chalk: Cramant, Avize, Le Mesnil-sur-Oger. Small family cellars open discreetly, where production can be counted in mere thousands of bottles.
The flow is easy: hotel pick-up in Épernay, a Mercedes at your disposal, and a route tweaked on the fly. You taste and tour while your driver handles the wheel and the bookings, linking two or three growers with a scenic stop and a pre-booked lunch.
