Built in the 1st century, 166 Roman arches glow warm at dusk, then turn slate-cool under Segovia’s night lighting. From there, the Alcázar—reborn after the 1862 fire—rises with its scaly roofs above the Eresma valley. Dinner is all about place: cochinillo asado carved with a plate and creamy judiones from nearby La Granja, grown since the 1700s. A lesser-known lookout 1.2 km from the old town frames the castle as if perched on a prow.
