From there, the Alcázar—reborn after the 1862 fire—rises with its scaly roofs above the Eresma valley. Dinner is all about place: cochinillo asado carved with a plate and creamy judiones from nearby La Granja, grown since the 1700s. A lesser-known lookout 1.2 km from the old town frames the castle as if perched on a prow.
