Before those Atlantic-wide views, the route winds to Espelette for chilies drying on facades—AOP protected since 2000—then to Ainhoa, a 13th‑century ribbon village lined with timbered houses. In just a few kilometers you cross beech woods, streams, and manex sheep meadows; look up to spot Napoleonic redoubts on the crests and, on the plate, the bright chili against ewe’s cheese.
