At 1,100 m in Zermatt and 1,449 m at the Törbel pass, the landscape tips into Europe’s steepest cultivated slopes, where vines cling to 30–60% gradients. The Clavau irrigation channel, traced in 1435, threads above Sion; Petite Arvine roots into schist, while Fendant—Chasselas by another name—pairs neatly with Valais raclette. Between Valère (13th c.) and Tourbillon (1297), history sits on dry-stone terraces. Twenty-five kilometers downstream, Salquenen leans to sunlit reds, and 40 minutes away Leukerbad still steams at 51°C, as it did in Roman times.
